To extract data from Exchange with Outlook.
  • Launch Access 2007
  • Select Blank Database
  • Give it a name such as DataExport
  • Click Create
  • Select the External Data tab
  • In the import box, select More and then Outlook
  • Select Link the data, OK
  • You’ll be prompted to select an Outlook profile (I used the one I was already logged into with Outlook so no credentials were requested)
  • Select an Outlook folder
  • Click next
  • Finish
Tada - that simple. I wish I knew this before, it would have save me lots of time.

Don't try this on a slow connection.

Credit goes to Lou at NMB for this tip. Not that I would know how but according to Lou this process can be scripted and batched fairly easily.
